Future Get-togethers
There was an article in the Gainesville Sun recently about a few lesser known attractions which might be of interest to some of the family who may plan future visits down here.
Florida EcoSafaris Zipline Safari - With a helmet and a harness hooked onto high-tension cables, visitors can zip through two 1/2 hour tours that go up to 55-feet high. This tour offers an aerial view of various Florida eco-systems inhabited by alligators, black bears, deer and Florida panthers. Located in St.Cloud just south of Orlando.

Snow and Caprese Bites
I posted on Facebook that we had snow today and Mom wanted to see pics on the blog, so here you go. This pic was taken after we came out of Albertson's. It snowed for a couple of hours but nothing stuck and it's all gone now.
The other pic is Chunnan's version of one of our favorite appetizers. I call them Caprese Bites because they're like little Caprese Salads. Cut a roma or other smallish tomato in half and scoop out the seeds. Fill the tomato with a basil leaf, a fresh mozzarella ball, and spoon a teaspoon or so of olive oil and balsamic vinegar emulsion (whip them together until slightly frothy) over the top to fill the tomato cup. The mozzarella balls we get at Costco are marinated in olive oil and parsley. Caprese Bites are a WONDERFUL light lunch or mid-day snack. If you have a little salami you can put a slice inside the tomato before you add the mozzarella ball. YUMMY!!!
